Kale Salad with a Splash of Heaven Dressing



This substance could possible be a splash of heaven caught in a bottle.  Just maybe.  A dressing so packed with goodness and health, but something that the kids actually want to eat with kale??  Creamy, garlicy, anchovy goodness all disguised in the form of salad dressing.


And here is (above) that kale salad that the kids actually eat.  Lightly dressed with a splash of heaven and, topped with shaved parmesan and croutons, and voila... salad perfection.


I found this recipe about a year ago, at Je Mange La Ville, and have been serving it very frequently in our household ever since, as, can I repeat, my KIDS ARE EATING KALE SALAD!  Serve it with some salmon or chicken, and you will find yourself with a healthy and delicious dinner. 


Kale Salad with a Splash of Heaven Dressing

Ingredients
1/4 cup fresh lemon juice
1 Tbsp anchovy paste
2 large garlic cloves
1 Tbsp Dijon mustard
1/2 cup extra-virgin olive oil
1/3 cup finely grated Parmesan
Kosher salt and freshly ground black pepper
12 ounces Tuscan kale or other kale
3/4 cup croutons, made from cubed, toasted crusty bread (or store bought)

Directions:

For the dressing:
1) Combine lemon juice, anchovy paste, garlic and mustard in a food processor.  Blend it up. 
2) Add the olive oil and 1/4 cup of the Parmesan and blend it up.  

For the salad
1) Peel the leaves off the ribs of the kale, and break into bite size pieces
2) Add dressing, croutons and remaining cheese

Eat and enjoy!
